Loaded Mediterranean Sweet Potato Fries

You’ve heard of loaded fries before, but have you heard of loaded sweet potato fries? We’ve been trying to find ways to use sweet potato fries as a healthier option as opposed to their yellow starchy counterparts. We love any dish that feels sharable and festive. For this dish we feed people 4 hearty portions with a full tray of these loaded garlic fries. With chopped rosemary garlic lamb, feta, tomato, cucumber, tzatziki, and fresh mint, these fries were legendary and are sure to find their way to our table again soon. They’re the stuff dreams are made of.

Loaded Mediterranean Sweet Potato Fries

Yields: 4 servings

Ingredients:

For fries:

  • 6 sweet potatoes
  • 3 cloves of garlic, minced
  • 3 T extra virgin olive oil
  • salt and pepper, to taste

Marinade for lamb:

  • 4 cloves of garlic, grated
  • Juice of two lemons
  • 4 T extra virgin olive oil
  • 2 T italian seasoning
  • Salt and pepper, to taste

1 lb slice lamb shoulder

Toppings:

  • 1 C diced cucumber
  • 1/2  C crumbled feta
  • 2 tomatoes, diced and deseeded
  • 1 red pepper, diced and deseeded
  • 1/4 C fresh mint

For tzatziki sauce:

  • 1 C plain, nonfat Greek yogurt
  • 1/2 C peeled and deseeded cucumbers, finely chopped
  • 1 clove of fresh garlic, minced
  • 2 T fresh parsley, finely chopped
  • 2 T fresh mint, finely chopped
  • Juice of 1/2 of a lemon
  • Salt and pepper to taste

Directions:

Preheat oven to 425 degrees F.

In a large ziploc bag, combine olive oil, garlic, lemon juice, and Italian seasoning. Place piece of lamb in bag and marinade for up to 30 minutes.

Clean and chop sweet potatoes. On aluminum foil cookie sheets toss with olive oil, garlic, salt and pepper. Cook for 15-20 minutes or until crispy. Flip once in between.

Remove from bag and place in a cast iron skillet on high, browning meat on both sides. Once meat has been seared, cover with a piece of aluminum foil and place in the oven at 350 degrees. Cook through until meat has reached 155 degrees fahrenheit. (You’ll want the meat slightly undercooked as it will go on the fries and be heated with toppings.)

Clean veggies and prepare toppings by dicing and deseeding. Remove meat from oven and chop into smaller pieces with a chef’s knife.  Spread chopped lamb, tomato, and feta cheese over fries. Place back in oven for 10 minutes to heat through. Meanwhile prepare the tzatziki sauce. To make tzatziki sauce, combine yogurt, cucumbers, garlic, parsley, lemon, and mint in a small bowl. Mix thoroughly. Salt and pepper to taste.

Remove fries from the oven. Add diced cucumber, fresh mint, and top with tzatziki sauce. Enjoy!
