Weeknight Dinners: Shrimp Linguine Pasta

Every now and again, you need a few simple recipes that are go-tos. This recipe has become a favorite and has been on repeat this week. It’s creamy, tangy, and comforting. For the moments where the day is long and you want dinner in 15 minutes flat, make this dish. It’s a game changer. Promise.

Shrimp Linguine Pasta

2 servings

Ingredients:

    • 1/4 C frozen medium shrimp
    • 1 C fresh organic spinach
    • 2 T extra virgin olive oil
    • 2 garlic cloves, minced
    • 1 heirloom tomato, chopped
    • 2 oz goat cheese
    • 1/4 C dry white wine
    • 1/4 lb linguine
    • Salt and pepper, to taste
    • Freshly grated parmesan cheese
    • Fresh basil, optional for garnish

Directions:

In a medium saucepan, bring water to boil. Once water has boiled, add pasta. Meanwhile, in a skillet, add olive oil over medium high heat. Add garlic and cook 30 seconds. Add spinach and chopped tomato. Once the spinach is wilted, add white wine and spinach. Using a spatula, melt the tangy goat cheese to create a creamy sauce. Pasta should be cooked in 7-10 minutes. Drain off cooking water. Add the sauce and veggie mixture to the pasta. Combine over low heat. Serve pasta in shallow bowls. Top with freshly ground salt and pepper, shredded basil, and parmesan cheese. Enjoy!
