Confession: during the fall and winter nights I love comfort food. It seems that salads and smoothies no longer fit the bill. I need something a bit more substantive. Recently I had a small gathering and dinner party of choice. With a few guests with food allergies, we opted to make a meal where the courses were both gluten-free and dairy-free. This meal was hearty and delicious. Filling the bill for the perfect weeknight dinner of comfort food. For the polenta, instead of using parmesan, we used a blend of nutritional yeast, cashews, and garlic powder. Serving breaded chicken thighs with a golden gravy and sauce on the bed of polenta, topped with ground salt and pepper, and fresh herbs.
There’s something about gluten-free baking. While the offerings have come a long way, it’s challenge to get a cake or muffin that isn’t overly dense. This muffin combines great sweet and savory pairings, and is a combination of flavors found in an everything bagel with the texture of a muffin or cornbread. I love serving this at a brunch, bringing balance to sweet coffee and fruit.
It’s crazy to think to me that today is the last day of 2015. It’s been a full year and one worth celebrating. More than anything, I look back and smile. There’s been loads of risk, courage, and stepping out past my comfort zone this year. Whatever your year has looked like, here’s to celebrating, raising a glass with friends and looking your best. My bet, you can probably look amazing repurposing a few items you have in your closet.
