Shrimp Ceviche Dip

The Big Game is right around the corner and that means one thing- food! Today I’ve teamed up with 64 bloggers around the nation to bring you a roundup of recipes perfect for this icon Sunday in football. Regardless of the team you choose, gather with friends around the screen, chat about the commercials, and enjoy this recipe.

Inspired by the cuisine of Oakland, this recipe boasts the freshness and flavors found throughout the thriving culinary scene of the Bay Area. With the spice of jalapenos, vest of lime, and freshness of produce, it’s perfectly light and will find a welcome spot among the other appetizers of the day. My favorite part? No cooking required! It’s the perfect dish to take to a party when you only have 20 minutes.

Shrimp Ceviche Dip

Ingredients:

    • 1 lb. raw shrimp, peeled, tails removed, diced
    • 3/4 cup fresh lime juice (about 6 limes)
    • 1/4 cup diced red onion
    • 1/4 cup diced and peeled cucumber (I prefer English cucumber)
    • 1 jalapeno, seeds removed, diced
    • 2 roma tomatoes, seeds removed, diced
    • 2 tbsp chopped cilantro
    • 2 tbsp mayo
    • Salt and pepper (to taste)

Directions:

Clean and devein shrimp, removing any peel or tail. Drain water and pat shrimp dry with paper towel. Place in a large bowl. Add the juice of 6 limes and let set for 15 minutes. Set aside.



Meanwhile, dice onion, cucumber, jalapeno, tomatoes, and cilantro. Once the 15 minutes have lapsed, grain the lime juice. (Your shrimp should now be cured, shifting from gray to red in color). Add chopped vegetables, mayo, salt and pepper. Mix thoroughly. Top with additional cilantro for garnish. Serve alongside homemade salsa and guacamole for a delicious trio of dips, paired with organic blue corn chips.
