Greens Get Creative: Salads to Keep Your Interest

There’s something about the new year that means one thing. It’s time to ditch the stretchy pants and overindulging of holiday eating and slip back into those skinny jeans. Over the past school year, I have found that I actually love salads. That’s right. I love them. I never thought I would say that, but with a bit searching and finding the right recipes, I’ve found salads that fill my stomach, give me energy throughout the day, and have different flavor profiles. I found that when made correctly, I actually love kale and quinoa. (Even in the same salad. At times my body craves it). Today I thought I would share with you a few of my go-to salad recipes to help you achieve all of your health and wellness goals for 2016.

Here’s a few of the things I love about these salads. (I have a pretty steep criteria and they all make the cut.)

One. They’re substantive.
These will keep you full throughout the day. With items like nuts, quinoa, and squash they’re robust and highlight seasonal ingredients.

Two. They’re colorful.
Regardless of what I’m eating it should always look good. With a combination of fruits, vegetables, and colorful greens, these salads look amazing tantalizing my appetite all the more.

They travel well.
Salad, an apple, and a snack bag of raw almonds are my lunch during school. Because these salads have minimal dairy they can hold for a few hours. Perfect for heading to class and eating during one o’clock lecture.
